Vietnamese Scallion Oil + Crispy Fried Shallots
15 mins prepServes 5
A flavorful and aromatic Vietnamese scallion oil, made with rendered pork fat and neutral oil, paired with crispy fried shallots. This versatile combo is perfect as an accompaniment to seafood like geoduck or other dishes.
Crispy Fried Shallots:
Thinly slice 1 large shallot and let it air dry to remove excess moisture (or pat dry with a towel).
Lightly coat in cornstarch and shake off the excess.
Fry in approximately 4 cups of oil until golden and crispy, then strain and set aside.
Scallion Oil:
Add pork fat to a pan over low-medium heat and slowly render the fat.
Once the pork fat is lightly golden, add 1/4 cup of neutral oil and let it heat through for a couple minutes.
In a mason jar or heatproof bowl, add 2 cups chopped green onions, 1 tsp salt, 1 tsp MSG, and 1.5 tsp of sugar.
Carefully pour the hot pork oil over the scallions to bloom everything together.
