Crispy Fried Chicken Wings with Laab dressing
25 mins prepServes 4
Laab is one of my favorite Lao dishes! It’s a minced meat salad tossed with a ton of fresh herbs & spices. It’s citrusy, spicy with a ton of umami from the fish sauce, padeak, & tamarind.
1. Marinade the wings with the granulated chicken bouillon, 2 tsp sugar, 2 tsp MSG, and 2 tsp black pepper. Marinade for 1 hour.
2. Bring the frying oil to high heat or at 375 degrees Fahrenheit.
3. In a bowl, combine the 1/2 cup cornstarch and 1/2 cup rice flour. Add the flours to the marinaded chicken wings, coating thoroughly, then transfer to the fryer.
4. Fry for 15 minutes, strain, and set aside.
5. For the Laab Dressing: Combine 2 tbsp of tamarind extract, 1 tbsp of fish sauce, 2 tsp of fermented fish paste, 1.5 tsp of MSG, 1 tbsp of garlic, 2 tsp of crushed chili flakes, and the juice from 1 whole lime. Mix well and set aside.
6. To a large bowl, combine the fried chicken wings along with the 1 cup roughly chopped mint, 1/2 cup roughly chopped cilantro, 1 stock of chopped green onions, 1 small knob of sliced shallots, chopped Thai chili peppers (as desired), the prepared laab dressing, and 2 tbsp of roasted rice powder. Toss altogether to coat.
7. Enjoy with fresh sticky rice, cucumbers, and lettuce.
