These chargrilled oysters are literally larger than your hands! This recipe features a homemade Cajun seasoning blend, a rich Cajun garlic butter sauce, and a generous topping of mozzarella and Parmesan cheeses, all grilled to perfection.
1. **Prepare Cajun Seasoning:** Combine 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp chili powder, 1.5 tbsp Old Bay seasoning, 1 tsp Tony Chachere's, a dash of rosemary (optional), a dash of salt (optional), and a dash of lemon pepper seasoning (optional). Mix well. Reserve approximately 3 tsp of this blend for seasoning the oysters. The remaining blend will be used for the Cajun garlic butter sauce.
2. **Prepare Cajun Garlic Butter Sauce:** Melt 1 stick of butter in a saucepan over low heat. Add 3 tbsp of minced garlic and sauté for 3 minutes on low heat. Add the reserved Cajun seasoning blend (the remainder from step 1). Mix well and set aside.
3. **Oyster Prep:** Rinse and clean the oysters thoroughly. Once oysters are shucked, you may clean them again to rinse out any shell particles. Arrange the shucked oysters on a platter. Grate some Parmesan cheese, mozzarella cheese, and fresh parsley, and set aside.
4. **Season Oysters:** Sprinkle the prepared Cajun seasoning (the 3 tsp reserved from step 1) over the oysters.
5. **Add Cheese and Parsley:** Top the oysters with cheese. Prepare half of the oysters with mozzarella cheese and the other half with Parmesan cheese only. Finish by sprinkling fresh parsley over the oysters.
6. **Grilling:** Transfer the prepared oysters onto a BBQ grill preheated to 375 degrees Fahrenheit. Add the Cajun butter sauce generously to each oyster. Close the grill and cook for 3-5 minutes. Continuously add more Cajun sauce as preferred during grilling. Finishing time varies based on whether you prefer them more undercooked or charred.
7. **Serving:** Any extra garlic butter sauce can be used for dipping.
